I had never had any sort of lentil salad (that I can recall) prior to making this salad. It was so easy and so yummy and will probably become a regular dinner in our house! I also love that it is vegetarian. Our goal here at home is to have at least 3-4 vegetarian dinners per week.

1 pound lentils
1 chopped shallot
2 cups halved red grapes1 chopped orange pepper
1/2 cup pine nuts
Lemon zest of 2 lemons

Lemon juice from 2 lemons
1/3 cup extra-virgin olive oil
Salt and pepper to taste

Bring a pot of water to a boil and add the lentils.  Cook until tender, stirring occasionally, about 18 to 20 minutes. Drain and let cool for 5 minutes. Place lentils and remaining salad ingredients in a large salad bowl. While the lentils are cooking, mix the ingredients for the vinaigrette. Toss the lentils and ingredients with vinaigrette and enjoy!
