I had some leftover peaches and tons of whole wheat tortillas that both needed to get eaten before they went bad. What other way to cook them then to make a yummy dessert??

Sauteed Peaches
Peaches (I used 5)
1 tbsp. vanilla extract
2 tbsp. brown sugar

 Mix vanilla extract and brown sugar together in a pan. Heat pan and add peaches, cut into quarters. Flip peaches so all sides are covered with the vanilla and brown sugar mixture. Cook on medium heat for about 5 minutes, then turn to low for another 5 minutes.

Cinnamon Tortilla Chips
10 whole wheat tortillas
3 tbsp. cinnamon
3 tbsp. sugar
Pinch of nutmeg

Heat oven to 350 degrees. Combine cinnamon, sugar, and nutmeg in a bowl and stir until combined. Cut whole wheat tortillas into quarters.  Line a pan with aluminum foil and spray evenly with cooking spray. Sprinkle with a bit of sugar mixture. Lay tortillas on top (make sure they do not overlap) and spray the tops of tortillas with cooking spray. Sprinkle with sugar mixture. If tortillas do not fit on one sheet, make sure to coat the next batch with more cooking spray before adding sugar mixture. Cook for 6-8 minutes, or until tortilla chips have crisped.

*Note: The juice leftover from the peaches mixture is delicious on top of the tortilla chips, so make sure to use it!
