Remember this breakfast pizza? Well, the morning I made that, I started thinking about barbecue chicken pizza. And I haven’t stopped thinking about it since then.
So, now I give you barbecue chicken pizza. It was so amazingly delicious I want to make it again tomorrow. Or in 5 hours.
Barbecue Chicken Pizza
Recipe adapted from The Pioneer Woman
Flour, for dusting
2-3 chicken breasts, defrosted
1 cup barbecue sauce (homemade or your favorite bought sauce)
2 tablespoons olive oil
Pinch of sea salt
Sliced fresh mozzarella
1/4 red onion
Preheat oven to 350 degrees. Spread a thin layer of barbecue sauce in the bottom of a baking dish. Place chicken breasts on top of barbecue sauce and put another thin layer of sauce on top. Spread evenly over chicken. Bake chicken for 20 minutes.
While chicken is baking, sprinkle flour on a pizza stone. Roll pizza dough on the pizza stone. Sprinkle with olive oil and spread with a spatula. Sprinkle with salt and pepper. Spread a thin layer of barbecue sauce on the pizza dough, leaving room around the edges for the crust. Add the fresh chopped mozzarella. Chop the onion and sprinkle on top of the dough. Once chicken is done, remove from oven and slice into small chunks. Spread evenly on the pizza. Sprinkle with more salt and pepper. Brush olive oil on the outside crust and sprinkle with salt and pepper. Bake for 15 minutes, or until crust begins to turn golden brown.
